This position is twofold. You will be the Head Cook for the Café Rambutan restaurant, as

well as responsible for healthy and protein-rich lunches for all students and staff at

Amisewaka-DLCC (approximately 150 people).

Café Rambutan has been running on a once a week basis for two years and in February 2025

we want to open it initially for lunch Monday-Friday, and then perhaps for dinner and on

weekends. The focus is on healthy food as well as local food. The menu is set but is of

course open for innovation and change.

You will have one Cook Helper on your team and a Restaurant Supervisor, Bar Helper (for

drinks) and Server will be working in the restaurant. There will be one Pastry Cook who will

assist you as well as prepare for pastries needed in our AmiMart business unit.

Our kitchen is free from any preservatives, single use plastics and food enhancers. The

campus is smoke free.

As Amisewaka-DLCC is a Vocational Training Center offering certificates in Cookery and FBS,

there is always a lot of activity going on in campus. Amisewaka-DLCC is under the umbrella

of Yayasan Adi Sewaka Widya and all profits from Café Rambutan are donated to this

foundation to help with student scholarships.

Responsibilities as Head Cook for Amisewaka-DLCC and Café Rambutan

1. Create menu items, recipes, and develop dishes ensuring variety and quality based on

local ingredients. Develop menus with innovative or existing culinary creations,

ensuring variety and quality in the dishes served.

2. Ensure the kitchen complies with all regulations, including sanitation and food safety

guidelines.

3. Develop and implement SOPs for the Kitchen Division.

4. Prepare and clean the kitchen area (Pewaregan) after use.

5. In Amisewakas five-star standard training kitchen, manage food and equipment

procurement, as well as timely deliveries.

6. Prepare budget plans for Café Rambutan and AmiMart.

7. Create and update weekly inventory records.

8. Approve dishes before they are served to customers.

9. Assist in creating value-added products from local ingredients (e.g., rambutan jam).

10. Determine food inventory needs, stock, and place orders.

11. Plan equipment or ingredient orders based on identified shortages.

12. Arrange repairs as necessary.

13. Control and oversee food preparation processes.

14. Address issues or defects promptly.

15. Manage and train kitchen staff.

16. Supervise the work of subordinates.

17. Ensure food products for AmiMart are properly prepared and delivered on time.

18. Coordinate with the Restaurant Manager and Business Manager for Café Rambutan

and AmiMart.

19. Be willing to assist with various tasks or volunteer work at PT PKA & Yayasan Adi

Sewaka Widya related to expertise and abilities, as needed.

HEAD COOK REQUIREMENTS

1. Minimum high school graduate or Culinary Diploma.

2. Maximum age: 45 years.

3. At least 3 years of experience in a similar position.

4. Proficiency in English, both spoken and written.

5. Strong skills in culinary creation and food innovation.

6. High commitment, ability to work quickly, and a positive attitude at work.

7. Knowledge of hygiene and consistency in food preparation.

8. Initiative to improve food quality.

9. Ability to manage budgets, handle numbers, and maintain inventory.

10. Strong leadership qualities.

11. Compassion and empathy for the underprivileged.
